Cookie Thursday 7/23/26- Cheddar pickle bites

This is one of the weirder favorite makes. It was weird when I found the recipe and weird now.

In an effort to update the recipe, I decided to finely dice the pickles. Instead of a “bam” pickle, it just seems more delicate. I don’t know.

Dicing the pickles definitely worked well. It was just kind of obnoxious.

I lined my colander with a lap sponge and spooned the pickles into it. I suspended the colander over a second bowl so the mess would be more contained. Next, I used my mini food processor and diced the pickles. Which I then drained a second time.

Not to be outdone with this idea of dicing the pickles, I decided to shred my own cheese. I have the technology, and goodness knows the cheese drawer has the cheese.

The cheese drawer continues to giveth. Minus the two 8 oz blocks of very sharp cheddar.

I lost the original recipe in the Pinterest purge of 2025. And I really couldn’t be bothered to look up such a simple recipe. Cheese, pickles, application of heat. It is one of the simplest recipes that I have used.

The only problem is that I could not recall the exact temperature of the oven.

I winged it.

I baked the cheese, pickles, cheese stacks in my favorite mini cupcake pan at 300 degrees Fahrenheit.

And they turned out exactly as I expected.

Then I remembered the small bag of already shredded asiago and decided to try that.

Yeah, bad idea. The asiago is a harder, drier cheese. These are not swappable. Maybe a younger asiago but you take what the cheese drawer gives.

But the cheddar pickle bites were good. Especially with the finely diced pickles.
