The oven continues to perform well. Whatever talking to it got, it embraced.
This week is a continuation of the Why is There So Much Cheese sorta theme for February. I made Cheese Dudes, a recipe I first became aware of late last year.
Have I said how glad I am to have a working oven?
And dishwasher?
Something fun about the dishwasher, if I choose the power dry setting, it opens itself up a crack when the cycle is completed. Very cool.
Cheese dudes are an offshoot of the cheddar penny. That is to say it is a cheddar cracker.
With crispy rice!
I feel like I’ve made versions of this before. A lot.
This recipe called for completely melted butter, which is not what I’ve done in the past.
I did take creative liberties and add an additional 1/4 c melted butter because the dough was too dry and wouldn’t hold together. I am glad that I did. The crispy rice sure uses a lot of liquid to become part of the dough.
I also mixed all the ingredients in my big red Tupperware bowl so I would have room to get my hands dirty and knead the dough into submission.
I will be making these again, but with more cayenne powder. I added some and you can barely tell.
